Dr. Antonio Bacigalupo from the Universidad Nacional Agraria La Molina in Lima, Peru discusses the nutritional value of various foods commonly found in Peru, and the efforts his institution has made to overcome malnutrition in the country. He emphasizes native crops such as quinoa, which meet or surpass the nutritional value of animal products such as milk. As Dr. Bacigalupo speaks, the basic food groups are laid out on a table in front of him to help illustrate his points. He talks about the differences between processed and unprocessed foods as well as highly nutritious but costly foods and less nutritious, inexpensive foods. Dr. Bacigalupo argues for an intermediate category consisting of nutritious and locally abundant foods, and also emphasizes the importance of protein in the diet. He also uses charts to illustrate his lecture.
